All About Me

Hello, and welcome to my website! I'm Matt. Matt the Butcher. 

I have been a butcher since 2009, when I began an apprenticeship at the University of Arizona Meat Science and Agricultural Lab down in Tucson. I spent 40 hours per week for six months learning not only how to slaughter animals humanely, but also how to utilize the whole carcass. 

Since then I've worked in Arizona, Wyoming, Virginia, DC, Maryland, Massachusetts, England, and Italy learning from the best chefs and butchers I could find. Butchery has become an extreme passion of mine.

I've enjoyed learning how to utilize the whole animal through new cutting techniques and how to cure meats.

I'm excited to share all of the knowledge I've gained over my career as a butcher, and also learn alongside all of you as I continue to experiment, research, and develop new ways to enjoy the world of meat.
