Apple Maple Sausage Links

These are the best addition to your breakfast spread without a doubt!

Meat ratio:

Pork Shoulder Boneless 100%


Based off the weight of the total meat ratio.

  • Kosher Salt 1.8%

  • Baking Soda 0.2%

  • White Pepper Powder 0.2%

  • Sage Powder 0.3%

  • Dried Thyme 0.2%

  • Cayenne 0.1%

  • Honey Crisp Apple, diced 2.5%

  • Maple Syrup 4%

  • Water 5%


  1. Roast the diced apple at 375°F until golden brown and let cool down.

  2. Then mix the cooked apple and maple syrup in a bowl so the apple absorbs the syrup.

  3. Take the freshly ground meat and place in a bowl with the kosher salt and baking soda. Mix until a bind starts to form.

  4. Then add the rest of the ingredients and mix until thoroughly bound together.

  5. Stuff sausage into 22mm natural lamb casing and make 1oz links. You can also just make patties with this mix.

  6. Put links on a tray and let sit overnight in the refrigerator uncovered to let it set up.

  7. You can now saute the links for breakfast and enjoy. These are extremely good with eggs and toast in the morning!
