The perfect versatile sausage for any palate.
Meat Ratio:
Pork Shoulder Boneless 100%
Ingredients
Based off the weight of the total meat ratio.
Kosher Salt 1.8%
Baking Soda 0.2%
Red Wine 6%
Fresh Garlic, minced 1.2%
Cracked Black Pepper 0.3%
Procedure
Take the freshly ground meat and place it in a bowl with kosher salt and baking soda. Mix until a bind starts to form.
Then add the rest of the ingredients and mix until thoroughly bound together.
Stuff sausage into 32mm natural hog casing and make 4oz links.
Put links on a tray let and sit overnight in the refrigerator uncovered to let it set up.
You can now grill, steam, boil, or saute the links and enjoy. These are extremely good simmered in tomato sauce and served with spaghetti noodles!
