Spanish Chorizo Pork Links

Looking for a way to spice things up? Here's your answer!

Meat Ratio:

Pork Shoulder Boneless 100%


Based off the weight of the total meat ratio.

  • Kosher Salt 1.8%

  • Baking Soda 0.2%

  • Brown Sugar 0.8%

  • Garlic Powder 0.3%

  • Smoked Paprika 0.33%

  • Sweet Paprika 0.66%

  • Cayenne Pepper 0.2%


  1. Take the freshly ground meat and place it in a bowl with kosher salt and baking soda. Mix until a bind starts to form.

  2. Then add the rest of the ingredients and mix until thoroughly bound together.

  3. Stuff sausage into 32mm natural hog casing and make 4oz links.

  4. Put links on a tray and let sit overnight in the refrigerator uncovered to let it set up.

  5. You can now grill, steam, boil, or saute the links and enjoy. These are extremely good cooked and chopped up in tacos or eaten right off the grill!
