With a simple ingredient list, and a stunning color, these sausages are perfect for your summer BBQ!
Meat Ratio:
Pork Shoulder Boneless 100%
Ingredients
Based off the weight of the total meat ratio.
Hardcore Carnivore Black Spice Rub 4.2%
Baking Soda 0.2%
Water 5%
Procedure
Take the freshly ground meat and place it in a bowl with the Hardcore Carnivore Black spice rub and baking soda. Mix until a bind starts to form.
Then add the rest of the water and mix until thoroughly bound together.
Stuff sausage into 32mm natural hog casing and make 4oz links.
Put links on a tray and let sit overnight in refrigerator uncovered to let it set up.
You can now grill, steam, boil, or saute the links and enjoy. These are extremely good grilled and enjoy in a hot dog bun with a spicy aioli!
